This single-cultivar oil, produced from green “Nocellara” olives grown in high hills and carefully pitted, offers a delicate aroma and a soft, gentle flavor with a unique richness. Extracted solely from the olive flesh, it is free from tannins (found in the pit) and bitterness (from the small almond inside the pit).
